Fish Filleting Mastery from Icy Waters

Our final night of the Hooked on Yukon Fishing program included a fish filleting demonstration from Steve at Icy Waters.  They are a local company that raises and exports Arctic Charr around the world.  Steve and some visitors worked on six fish and distributed the fillets to those on hand. I always enjoy watching a professional cut fish. My last week was in Valdez watching Alaskan’s do it like it was tying their shoes. I have to admit I am not bad at the fillet myself.  This is a benefit of having a Dad as a chef. Don’t forget to get to the Fish Ladder soon as the Yukon Salmon run is starting to dwindle.  Some big fish came through last night which was a real treat.  Let’s get out and support these salmon and hope that this run stays with us for a long time.
